There’s something beautifully poetic about firsts, especially when they arrive a little later than expected yet feel perfectly timed. At 36, I didn’t just taste my first Kunafa pistachio bar, I experienced it. As a food blogger, I’ve explored countless flavors, textures, and stories plated on dishes. But this one? This wasn’t just dessert, it felt like a quiet dream unfolding. The moment I unwrapped it, there was a subtle elegance. No loud introduction, no dramatic garnish, just a promise. "Yummiest vegetarian Taco Recipe"

 

Yesterday, my sister-in-law came over for dinner and I decided to make her some vegetarian tacos. She's been a vegetarian for a few years now, and I always try to make something special for her when she visits. Tacos are one of her favorite foods, so I knew I couldn't go wrong with this choice.

I started by preparing the filling for the tacos. I sautéed some diced onions and garlic in a little bit of olive oil until they were soft and translucent. Then, I added a can of black beans, a can of diced tomatoes, and some spices. I used cumin, chili powder, smoked paprika, and a pinch of salt and pepper. I let the mixture simmer for a few minutes to let the flavors meld together.

Next, I prepared the toppings. I chopped up some lettuce, tomatoes, and avocado. I also grated some cheddar cheese and sliced up some jalapeños. I set everything out on the table in separate bowls so that everyone could build their own tacos.

For the tortillas, I heated up a nonstick skillet over medium-high heat. I placed a tortilla in the skillet and let it cook for about 30 seconds on each side until it was warm and pliable. I repeated this process with the remaining tortillas.

Once everything was ready, we all sat down to enjoy our tacos. My sister-in-law loved them and even asked for the recipe. I was happy to share it with her, and I'm happy to share it with you too!

Vegetarian Taco Recipe:

Ingredients:

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes, drained
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Tortillas
  • Lettuce
  • Tomatoes
  • Avocado
  • Cheddar cheese
  • Jalapeños

Directions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook until soft and translucent.
  3. Add the black beans, diced tomatoes, cumin, chili powder, smoked paprika, salt, and pepper to the skillet.
  4. Simmer the mixture for 5-10 minutes until the flavors meld together.
  5. Heat up the tortillas in a nonstick skillet.
  6. Serve the filling and toppings in separate bowls so that everyone can build their own tacos.
  7. Enjoy!
