Ingredients:

For the cake:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts (optional)
  • For the cream cheese frosting:
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

Preparing the Cake Batter:

  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan or two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger until well combined.
  3. Add the vegetable oil and eggs to the dry ingredients, and mix until the batter is smooth and well incorporated.
  4. Fold in the grated carrots, crushed pineapple, and chopped walnuts (if using). Stir until evenly distributed throughout the batter.

Baking the Cake:

  1. Pour the cake batter into the prepared pan(s) and spread it evenly.
  2. Place the pan(s) in the preheated oven and bake for approximately 30-35 minutes (adjust accordingly for round pans) or until a toothpick inserted into the center comes out clean.
  3. Once baked, remove the cake from the oven and allow it to cool completely on a wire rack before frosting.
  4. Preparing the Cream Cheese Frosting:
  5. In a large mixing bowl, beat the softened cream cheese and butter until light and fluffy.
  6. Gradually add the powdered sugar, one cup at a time, and continue beating until the frosting is smooth and creamy.
  7. Finally, mix in the vanilla extract until well incorporated.
Frosting the Cake:

  1. If you baked a single rectangular cake, spread the cream cheese frosting evenly over the top of the cake. For layered cakes, place one layer on a serving plate, frost the top, then add the second layer and frost the entire cake.
  2. Feel free to get creative with the frosting by using a spatula or piping bag to create beautiful designs or swirls.
  3. Serving and Enjoying:
  4. Once frosted, it's time to serve and enjoy the delightful carrot cake!
  5. Slice the cake into individual servings and savor every bite, relishing the combination of moist cake, crunchy walnuts, and tangy cream cheese frosting.
  6. Pair it with a warm cup of tea or coffee, or if you prefer, a glass of cold milk.
Conclusion:

Baking a homemade carrot cake for a dear friend is a wonderful way to show your love and appreciation. The soft texture, fragrant spices, and the sweet essence of carrots make this cake an irresistible treat for any occasion. So, whether you're surprising a loved one or simply indulging in a personal craving, this carrot cake recipe is sure to bring smiles and contentment all around.
