"Feasting with Mom: A Food Blogger's Mother's Day Journey"

Ingredients:
2 bunches of spinach (about 500 grams)
250 grams of paneer
1 onion, chopped
2 tomatoes, chopped
2 green chillies, chopped
1-inch ginger, grated
4 cloves of garlic, chopped
1 tsp cumin seeds
1 tsp coriander powder
1 tsp garam masala
1 tsp turmeric powder
Salt to taste
2 tbsp oil or ghee
2 tbsp cream (optional)
Instructions:
Wash the spinach thoroughly and blanch it in boiling water for 2-3 minutes. Drain and rinse with cold water to retain its green color. Puree the spinach in a blender or food processor until it forms a smooth paste.
Cut the paneer into small cubes and shallow fry them until they turn golden brown. Drain on a paper towel and keep aside.
Heat oil or ghee in a pan and add cumin seeds. When they start to sizzle, add chopped onions, green chillies, garlic and ginger. Saute until the onions turn translucent.
Add chopped tomatoes and cook until they become soft and pulpy.
Add coriander powder, garam masala, turmeric powder and salt. Mix well and cook for 2-3 minutes.
Add the spinach puree and mix well. Cook for 5-7 minutes until the spinach is cooked.
Add the fried paneer cubes and mix gently. Cook for another 2-3 minutes until the paneer is heated through.
If using cream, add it at this stage and mix well. Cook for another minute and switch off the heat.
Serve hot with rice or Indian bread.
Palak paneer is a healthy and delicious dish that is easy to prepare. You can adjust the spice level according to your taste by adding or reducing the amount of green chillies. It is also a great way to include more greens in your diet. Enjoy!
